GINGERY TOFU-AVOCADO SPREAD

The combination of tofu and avocado with the spiciness of ginger and the lightness of lemon makes for an unusual flavor blend. This delicious dish can be used as a spread or served on a bed of lettuce as a meal, accompanied by other little salads, such as shredded carrots and cooked beets.

INGREDIENTS

  • 1 medium-ripe avocado, peeled, pitted, and halved

  • 4 ounces (125 g) firm tofu, crumbled

  • 1 rib celery, finely chopped (about ½ cup)

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons finely chopped fresh ginger root

  • 2 tablespoons tamari or soy sauce

  • 1 clove garlic, finely chopped

  • ¼ teaspoon sea salt

  • Ground cayenne

Stand straight, breathe normally, and be aware of what thinking as you mash the avocado; keep returning to mashing the avocado as the mind wanders.     

METHOD

  • With the back of a fork, mash avocado in a medium bowl until chunky.

  • Using fork, stir in tofu, celery, lemon juice, ginger, tamari, garlic, salt, and cayenne until mixed but not smooth. Do not use a blender because the mixture should be textured.

  • Transfer to a serving bowl.

Makes about 1 cup (250g)
